Old Times Gingerbread

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Mix the chopped almonds, candied peel, ground ginger, mixed spice, and flour in a bowl.

  3. Slightly warm the Lyle's Golden Syrup, margarine, and sugar, then beat until creamy.

  4. Add the egg and dissolve the carbonate of soda in a little milk before mixing everything together.

  5. Combine all ingredients well and pour into a baking dish.

  6. Bake for about two hours, avoiding any shaking or cooling while in the oven.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
