Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut the lemon peel.

  3. Mix the lemon peel with the flour, raisins, and ground ginger.

Make the batter

  4. Add the dissolved baking soda mixture along with the Lyle's Golden Syrup to the batter.

What each ingredient does

Flour
Provides the main structure that holds the cake together as it bakes.
Baking soda
Reacts with the acidic ingredients to produce gas that helps the cake rise.
Sugar
Adds sweetness and helps the cake brown while contributing to a tender crumb.
Margarine
Adds fat that tenderizes the crumb and carries flavor through the batter.
Egg
Adds structure and binds the batter together as it sets in the oven.
Lyle's golden syrup
Adds moisture, sweetness and browning, helping the cake stay soft.

The step that matters

Dissolve the baking soda in the milk. Baking soda needs to be fully dissolved so it spreads evenly through the batter. Undissolved pockets can leave bitter spots or uneven rising in the finished cake.

Swap the ginger

How well each one fits the dish's main ingredients (flour, sugar, raisin, lemon, egg, milk, syrup):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Turmericfits about as well

Fit is the average pairing score against flour, sugar, raisin, lemon, egg, milk, syrup. Candidates are from the same food group and used in at least 100 recipes.
