Ingredients

Directions

Make the custard base

  1. Mix the egg yolk and Lyle's Golden Syrup together in a bowl.

  2. Add the milk, cream (if using), lemon juice, and vanilla essence to the mixture.

  3. Heat the mixture in a double boiler or a jug in hot water, stirring constantly until warm.

  4. Strain the mixture through a sieve and let it cool.

Freeze

  1. To freeze, place the mixture in a clean smaller tin, then put this tin inside a larger one.

  2. Pack the space between the tins with broken ice and freezing salt.

  3. Cover and roll the tins back and forth on the floor for 20 to 30 minutes, shaking occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Adds richness and helps emulsify the mixture into a smooth, creamy base.
Milk
Forms the liquid base of the ice cream, carrying flavour and setting into a soft texture.
Cream
Adds fat, which makes the frozen ice cream smoother and less icy.
Lyle's golden syrup
Adds sweetness and keeps the frozen texture softer by limiting large ice crystals.

The step that matters

Freezing with ice and salt. Salt lowers the melting point of the ice, making it colder than ice alone. Rolling keeps the mixture moving so ice crystals stay small and the texture stays smooth.
