Why it works: Lemon and sherry are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 3,273 recipes. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓
Calves’-Feet Jelly
Ingredients
Directions
Prepare the stock
Clean and slit the calves' feet.
Boil them slowly in 5 quarts of water until more than half is reduced.
Skim the stock, strain it, and let it cool until firm.
Remove the top fat and sediment.
Make the jelly
In a preserving pan, combine the jelly stock, sugar, lemon peel, lemon juice, wine, egg whites, and crushed eggshells.
Stir well and heat gently without agitation.
Boil slowly for 12 to 15 minutes, then add a little cold water and boil for another 5 minutes.
Cover with a flannel cloth and let it settle for 30 minutes.
Pour the jelly into a flannel jelly bag and strain until clear.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Calves' feet
- Release gelatin into the stock, which sets the jelly when cooled.
- Egg whites
- Bind to impurities as they heat, helping the jelly become clear when strained.
- Lemon juice
- Adds acidity that brightens the flavour and helps balance the sugar.
- Madeira or sherry
- Adds aroma and depth of flavour to the jelly.
- White sugar
- Adds sweetness and balances the acidity of the lemon.
The step that matters
Heat gently without agitation. Stirring or vigorous boiling at the start breaks up the egg white raft and stirs impurities back in, which clouds the jelly. Gentle heating lets the whites rise and trap sediment so the strained jelly comes out clear.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, sherry, egg):
- Vanillafits better
- Figfits better
- Pineapplefits better
- Lemonthe original
Fit is the average pairing score against sugar, sherry, egg. Candidates are from the same food group and used in at least 100 recipes.
