What each ingredient does

Gelatine
Sets the liquid into a light, wobbly structure once it cools.
Sweet cream
Adds richness and, when whipped, a light airy texture.
Sugar
Sweetens the mixture and balances the citrus acidity.
Orange juice and pulp
Provides the main orange flavor and some moisture.
Lemon juice
Adds acidity that brightens the sweetness and orange flavor.

The step that matters

Whip when slightly thick. Whipping before the gelatine has partly set leaves the mixture too runny to hold air, while waiting too long makes it too firm to whip smoothly. Gelatine sets as it cools, so timing controls the final texture.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, orange, cream, vanilla, sherry, almond, strawberry):

  1. Figfits better
  2. Apricotfits better
  3. Peachfits better

Fit is the average pairing score against sugar, orange, cream, vanilla, sherry, almond, strawberry. Candidates are from the same food group and used in at least 100 recipes.
