Sweet Potatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potatoes

  1. Boil and peel the sweet potatoes.

  2. If large, cut them in halves lengthwise.

  3. Alternatively, slice the boiled and peeled potatoes.

Layer and bake

  1. Butter a baking dish and layer the potatoes, dotting with butter and sprinkling with brown sugar between layers.

  2. Continue layering until the dish is full.

  3. Bake for about 30 minutes at 350°F (175°C).
