Strawbebby Ice

Ingredients

Directions

Make the strawberry base

  1. Mash the strawberries with the sugar and let stand for at least 1 hour.

  2. Add the lemon juice and strain through a cloth, pressing out all the juice.

  3. Mix in an equal measure of water.

Freeze and fold

  1. When the mixture is half frozen, fold in the beaten egg whites.

Assemble and freeze

  1. Line a mold with rich vanilla ice cream and fill the center with fresh fruit. Ensure the fruit is chilled but not frozen.

  2. Cover with more ice cream.

  3. Seal tightly.

  4. Place in the freezer for about 30 minutes with ice and salt packed around it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main fruit flavor and body of the ice.
Sugar
Sweetens the mixture and lowers its freezing point for a softer texture.
Egg whites
Beaten and folded in to add airiness and a lighter texture.
Lemon juice
Adds acidity that brightens the strawberry flavor.
Rich vanilla ice cream
Forms the creamy outer layer that encloses the fruit.

The step that matters

Fold in the egg whites when the mixture is half frozen. If the base is fully frozen, the beaten whites cannot blend in evenly and the ice loses its airy lightness. If it is still liquid, the whites deflate and the mixture becomes watery.

Swap the lemon

Fit is the average pairing score against sugar, egg, vanilla, cream, peach. Candidates are from the same food group and used in at least 100 recipes.
