Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet base and, when boiled, sets into the chewy taffy structure.
Molasses
Adds deep flavour and colour, and softens the texture of the taffy.
Cream
Adds fat and richness, making the taffy tender rather than brittle.
Butter
Adds fat for smoothness and a rich flavour that helps the taffy stay soft.

The step that matters

Boil until the mixture cracks in cold water. Sugar syrup must reach the right concentration to set chewy. Stopping too early leaves taffy sticky and soft; boiling too long makes it hard and brittle.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, molasses, cream, egg, butter):

  1. Almondfits better
  2. Pecansfits about as well
  3. Walnutfits about as well
  4. Nutsthe original

Fit is the average pairing score against sugar, molasses, cream, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
