How to Ice Cake

Ingredients

Directions

  1. Use a long, broad knife to spread icing on the cake.

  2. Apply two coats; the first should be thin to fill holes and rough spots.

  3. Let the first coat harden slightly before adding the final coat.

  4. Wet the knife occasionally to keep the icing smooth.

  5. If the icing is too soft, whip in more icing sugar.

  6. To make eggs easier to beat and whiter, add a little lemon juice, salt, baking soda, or tartaric acid before beating.

  7. If you want to decorate, save some icing, color it as desired, and apply it once the base icing has hardened.

  8. After icing, place the cake in a warm area or in front of an open oven door to dry the icing.
