Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Dissolve the yeast in lukewarm water.

  2. In a bowl, mix the lard, riced potatoes, sugar, and salt.

  3. Add the beaten eggs.

  4. Add the milk.

  5. Add the dissolved yeast.

  6. Gradually add about 4 cups of flour to form a soft dough.

  7. Cover and let rise for 2 hours.

Shape and bake

  1. Shape the dough into rolls or a loaf.

  2. Butter the top.

  3. Let rise again.

  4. Bake in a preheated oven at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the gluten network that gives the dough its structure and chew.
Riced potatoes
Add moisture and a soft, tender crumb to the dough.
Lard
Adds fat that tenderizes the crumb and keeps the rolls soft.
Eggs
Add richness and structure, helping the dough hold together and brown.
Sugar
Feeds the yeast and adds sweetness and browning in the baked crust.
Yeast
Produces carbon dioxide during rising, leavening the dough and giving it lightness.

The step that matters

Let rise again. The dough must rise fully before baking so the yeast's gas is trapped in the gluten network. Underproofed rolls stay dense, while overproofed dough can collapse in the oven.

Swap the potato

How well each one fits the dish's main ingredients (flour, milk, egg, sugar):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against flour, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
