The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and peel the sweet potatoes, then cut them into ⅓ inch slices.

  2. Arrange the slices on skewers in groups of three or four.

  3. Parboil the skewered potatoes for six minutes, then drain.

Bake and serve

  1. Brush the potatoes with melted butter and sprinkle with brown sugar.

  2. Bake in a hot oven at 400°F (200°C) until well browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Provide the starchy, tender body of the skewers that softens during parboiling and baking.
Melted butter
Carries heat to the surface and helps the potatoes brown and taste rich.
Brown sugar
Caramelises on the hot surface, adding sweetness and deeper browning.

The step that matters

Parboil the skewered potatoes for six minutes, then drain. Parboiling partly cooks the starch before baking, so the centres become tender while the outside has time to brown. Skipping it or overcooking it can leave the potatoes hard inside or mushy and falling apart.

Swap the sweet potato

How well each one fits the dish's main ingredients (butter, sugar):

  1. Sweet potatothe original
  2. Leekfits about as well
  3. Potatofits about as well
  4. Capsicumfits less well

Fit is the average pairing score against butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
