What each ingredient does
- Egg yolks
- Creamed to a thick base that gives the salad its rich, smooth texture.
- Olive oil
- Adds fat that emulsifies with the yolks, enriching flavour and smoothing the texture.
- Vinegar
- Adds acidity that brightens the rich yolk mixture and balances its richness.
- Sweet cream
- Adds moisture and richness, loosening the yolk mixture into a spreadable filling.
- Dry mustard
- Adds sharp, pungent flavour that cuts through the richness of the yolks.
The step that matters
Creaming the yolks until very thick. Working the yolks with oil and vinegar builds a stable emulsion. If the mixture is under-worked, it stays loose and will not hold its shape when piped or spooned into the whites.
Flavor stand-ins for the mustard
How well each one fits the dish's main ingredients (egg, cream, pepper, olive, vinegar):
- Capsicumbetter flavor fit
- Spinachabout as good a flavor fit
- Mustardthe original
- Cucumberabout as good a flavor fit
Fit is the average pairing score against egg, cream, pepper, olive, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
