Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid mixture into a light, wobbly structure as it cools.
Egg whites
Whipped into foam, they add air and a light, airy texture to the sponge.
Sugar
Sweetens the mixture and helps stabilise the whipped egg white foam.
Lemon juice
Adds acidity that brightens the strawberry flavour and balances the sweetness.

The step that matters

Set the vessel in a pan of ice water and stir until it thickens. Cooling gently while stirring lets the mixture thicken to a spoonable state before the egg whites are folded in. If it sets fully or stays too warm, the foam deflates or the gelatine forms lumps and uneven texture.
