What each ingredient does
- Grapes
- Provide the fruit, pectin and flavor that form the jam's body and taste.
- Sugar
- Sweetens the jam and helps it thicken and keep as it cooks down.
The step that matters
Cook the pulp until it separates from the seeds. Heating the pulp gradually and cooking it until the seeds release lets the seeds be strained out cleanly. Skipping this makes the jam gritty with seed fragments.
