Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Riced potatoes
Provide the bulk and soft, fluffy body of the fritter filling.
Grated cheese
Adds richness and flavor, and helps bind the mixture as it melts.
Egg yolks
Bind the mixture and add richness to the filling.
Butter
Adds fat for richness and a smoother, softer texture.
Breadcrumbs (in the method)
Form a crisp, golden crust during frying.

The step that matters

Coating and frying the shapes. The egg coating and breadcrumbs must fully enclose the shapes so the filling does not leak out in the oil. Frying at a steady temperature until golden brown gives a crisp crust while the potato centre heats through.
