What each ingredient does

Sweetbreads
Provide the tender, delicate meat that is the main component of the dish.
Butter
Adds richness and moisture, and helps the surface brown and taste rich when broiled.
Vinegar
Its mild acidity helps firm the sweetbreads during simmering and keeps them pale.

The step that matters

Simmering in vinegar and salt. Simmering must stay gentle and timed. Too hard a boil can toughen and break the delicate membranes, while a short simmer leaves the sweetbreads undercooked and rubbery. The acid and salt help firm the meat for clean handling.

Swap the parsley

How well each one fits the dish's main ingredients (vinegar, butter):

  1. Tarragonfits better
  2. Garlicfits about as well
  3. Parsleythe original
  4. Capersfits about as well

Fit is the average pairing score against vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
