Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. In a bowl, mix flour, sugar, baking powder, fat, salt, and milk until combined.

  2. Roll the dough to ½ inch thick.

  3. Spread the dough with butter, then sprinkle with brown sugar, cinnamon, and currants.

  4. Roll the dough up and cut into slices ½ inch thick.

Bake

  1. Place the slices in a greased pan with cut surfaces facing up and down.

  2. Bake in a preheated oven at 400°F (200°C) for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the dough structure that holds the rolled layers together.
Baking powder
Releases gas in the oven, helping the rolls rise and become light.
Butter
Adds fat and richness, giving the layers a tender texture.
Brown sugar
Adds sweetness and helps the filling caramelize and brown in the oven.
Currants
Provide chewy pockets of sweet, fruity flavor inside the rolls.

The step that matters

Roll the dough to an even ½ inch thickness. Even thickness makes the rolls bake at the same rate, so thin spots do not dry out or burn while thick centers stay doughy.
