Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the custard into a firm, sliceable body as it cools.
Egg
Thickens the custard when cooked, and the whipped white lightens the set cream.
Orange juice
Supplies the main flavour and liquid base of the cream.
Sugar
Sweetens the cream and balances the acidity of the juice.

The step that matters

Cook the mixture over hot water until it thickens like a soft custard. Egg yolk thickens when heated gently; too much heat scrambles it into lumps. Gentle, indirect heat over water keeps the custard smooth.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
