Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; gentle boiling and skinning firm it for easier handling before frying.
Butter
Fat for frying that promotes browning and adds rich flavour to the sweetbreads.
Flour
Light coating that helps the surface brown when fried and thickens the sauce.
Cream
Optional liquid that enriches the sauce and adds body and smoothness.

The step that matters

Fry slowly until browned on both sides. Slow frying in butter browns the flour-coated surface gently, building flavour without scorching the butter or drying the sweetbreads.
