Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the grated lemon rind, lemon juice, sugar, hot water, flour, and egg yolks.

  3. Add the melted butter and mix well.

  4. Pour the mixture into a pie crust and bake until set.

Make the meringue and finish

  1. While the pie is baking, beat the egg whites to a stiff froth.

  2. Gradually add 4 tablespoons of sugar to the egg whites and mix until glossy.

  3. Spread the meringue over the baked pie and return to the oven until lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the lemon filling as they set and add richness to it.
Flour
Thickens the lemon filling so it holds a sliceable body.
Egg whites
Whipped into foam to form the airy, stable meringue topping.
Lemon juice
Provides the sharp acidity that balances the sweetness of the filling.
Sugar
Sweetens the filling and helps stabilize the whipped egg white meringue.
Butter
Adds richness and a smooth, tender texture to the filling.

The step that matters

Spreading the meringue over the baked pie. Meringue should be spread so it touches the crust edge all around, which helps prevent shrinking and weeping. Browning in the oven is then a matter of watching closely, since sugar darkens quickly.
