Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pears
Form the bulk of the chips and provide the fruit flavor and body.
Sugar
Draws moisture out of the fruit and sweetens while it cooks down.
Canton ginger
Adds warm, spicy aroma and flavor that stands up to long cooking.
Lemons
Add acidity that brightens the sweetness and helps balance the flavor.

The step that matters

Cook slowly for three hours. Long, gentle cooking lets the sugar concentrate and the fruit soften and set without scorching. Too much heat can burn the sugar and make the pieces bitter.

Swap the pear

How well each one fits the dish's main ingredients (ginger, sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Mangofits about as well
  4. Pearthe original

Fit is the average pairing score against ginger, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
