Peach Short Cake

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the peaches

  1. Peel and slice the peaches.

  2. Sprinkle the sliced peaches with granulated sugar and let stand for 30 minutes.

Bake the cakes

  1. Roll out the short cake dough to 1 inch thick and to the size of jelly‑cake tins.

  2. Place the dough on buttered tins and bake at 400°F (200°C) for about 15 minutes.

  3. Once baked, split the cakes around the edge and break apart.

Assemble and serve

  1. Butter the lower piece and spread it thickly with sliced peaches.

  2. Place the other cake on top and cover with the remaining peaches.

  3. Serve hot with cream.

What each ingredient does

Short cake dough
Forms the tender, layered cake that holds the peaches.
Peaches
Provide moisture, sweetness and fruity flavor in the filling and topping.
Granulated sugar
Sweetens the peaches and draws out their juice as they stand.
Butter
Adds richness and flavor to the buttered tins and the cake layer.

The step that matters

Splitting the cakes while still warm. Cakes split more cleanly when warm, but they are fragile. Cooling too long can make them crumble, while splitting too roughly can tear the crumb and make the layers uneven.

Swap the peach

How well each one fits the dish's main ingredients (sugar, butter):

  1. Vanillafits better
  2. Figfits about as well
  3. Peachthe original
  4. Coconutfits about as well

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
