Lemon Sherbet

Ingredients

Directions

Make the syrup and lemonade

  1. Boil 1 pint of sugar with 1 pint of water until clear to make a thick syrup.

  2. Let the syrup cool, then mix in the juice of 6 lemons and enough water to make a rich lemonade.

Make the candy and finish

  1. When the mixture is half frozen, boil the remaining pint of sugar with a little water to prepare a soft candy.

  2. While the candy is hot, add the stiffly beaten egg whites, flavor with vanilla, and add a pinch of cream of tartar.

  3. Beat the mixture until thick, then fold it into the half-frozen lemonade.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Juice supplies the sharp acidity and bright lemon flavor of the sherbet.
Egg whites
Whipped into foam, they add lightness and a fluffy, airy texture.
Sugar
Sweetens the base and keeps the frozen sherbet soft and scoopable rather than icy.
Cream of tartar
Acid that stabilizes the whipped egg white foam so it holds its volume.
Vanilla extract
Adds aroma that rounds out the lemon flavor.

The step that matters

Folding the hot candy and whites into the half-frozen lemonade. Hot sugar candy poured into stiffly beaten whites partly cooks and sets the foam, which helps it hold. Folding gently keeps that air in the mixture, while overbeating or stirring too hard can deflate it and leave a dense sherbet.
