Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Poach the roast

  1. Skewer the fillet or rib-roast into a round shape.

  2. Place the skewer in a deep pot.

  3. Pour in boiling water and vinegar.

  4. Add onion slices.

  5. Cover the pot.

  6. Cook gently for 10 minutes per pound.

Brown the roast

  1. Transfer the roast to a meat pan.

  2. Rub the roast with butter.

  3. Dredge the roast lightly with flour.

  4. Brown the roast in a 400°F (200°C) oven.

Make the gravy

  1. Strain the gravy from the pot.

  2. Cool the strained gravy.

  3. Skim off the fat from the gravy.

  4. Season the gravy with pepper and salt.

  5. Thicken the gravy with browned flour.

  6. Boil the thickened gravy.

  7. Serve the gravy in a gravy bowl.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fillet or rib-roast
Main cut, shaped into a round and cooked gently in liquid until tender.
Butter
Fat that helps the outside brown and develop a richer surface.
Flour
Coats the surface so it browns and forms a light crust.
Onion
Adds aroma to the cooking liquid, which carries into the gravy.
Browned flour
Thickens the gravy as its starch swells in the hot liquid.

The step that matters

Cook gently for 10 minutes per pound. Gentle heat keeps the meat tender and juicy. A hard boil tightens and toughens the proteins and drives moisture out of the roast.

Swap the onion

How well each one fits the dish's main ingredients (vinegar, butter, flour, pepper):

  1. Shallotfits better
  2. Capsicumfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against vinegar, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
