What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the soufflé its body and structure.
Egg yolks
Enrich and thicken the base, adding richness and helping it set.
Egg whites
Whipped to stiff peaks, they lighten the mixture and make it rise in the oven.
Milk
Forms the liquid base that the tapioca swells in and cooks into a custard.
Butter
Adds fat for richness and a smooth, tender texture.

The step that matters

Folding in the egg whites. Whipped whites hold air that lifts the soufflé. Folding gently keeps that air in; stirring hard deflates the foam, so the soufflé rises less and turns dense.
