What each ingredient does

Sweetbreads
The main protein; soaking and blanching firm and clean it before cooking.
Egg
Binds the bread crumb coating so it adheres during frying or roasting.
Bread crumbs
Forms a crisp, browned outer coating when roasted, baked, or fried.
Fresh butter
Adds richness and flavor to the peas.

The step that matters

Soak and blanch the sweetbreads. Soaking draws out blood and impurities, and brief blanching firms the surface. Skipping either can leave the meat tasting harsh and making it harder to handle.
