What each ingredient does

Red carrots
Provide the main body, sweetness and colour of the soup.
Butter
Adds richness and carries flavour while the carrots cook gently.
Brown gravy soup
Supplies the liquid that cooks the carrots until soft enough to purée.

The step that matters

Stew the carrots without browning. Keeping the heat low and the carrots pale preserves a clean, sweet carrot flavour. Browning adds bitter, toasted notes that change the soup's taste.

Swap the carrot

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotthe original
  4. Onionfits about as well

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
