Ingredients

Directions

Prepare the lobster

  1. Select good-sized lobster tails and remove them entirely.

  2. Slice the tails into ⅓-inch thick pieces.

Coat and fry

  1. Dip each piece into the beaten eggs, then coat with seasoned bread crumbs.

  2. Press the crumbs onto the lobster with a knife blade and repeat the egg and crumb process.

  3. Fry the cutlets quickly in good butter until light brown.

Serve and make the sauce

  1. Serve them dry, arranged in a chain on a hot dish.

  2. For the sauce, heat the claw meat in melted butter with essence of anchovies, chili vinegar, salt, and mace.

  3. Add the coral for color and optional shrimps, heating them gently.

What each ingredient does

Lobster tails
Forms the main body of the cutlets and gives them their flavor.
Eggs
Bind the bread crumbs to the lobster so the coating holds during frying.
Bread crumbs
Form a crisp, golden coating that browns in the hot butter.
Good butter
Fries the cutlets to a light brown and carries richness into the dish.
Essence of anchovies
Adds a salty, savory depth to the sauce.
Strong chili vinegar
Adds acidity and heat to the sauce, cutting through the butter.

The step that matters

Fry the cutlets quickly in good butter until light brown. Breaded seafood cooks fast; over-long frying dries out the lobster and can burn the crumbs before the inside is just heated through. Hot butter browns the coating quickly, so keep the heat high enough to brown without scorching.

Swap the mace

How well each one fits the dish's main ingredients (lobster, egg, bread, pepper, nutmeg, butter, vinegar):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against lobster, egg, bread, pepper, nutmeg, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
