Canned Tomatoes
Ingredients
Directions
Pour boiling water over the tomatoes and let them stand for a few minutes.
Drain the water, remove the skins, and slice the tomatoes into small pieces, discarding any hard or defective parts.
If desired, add a little coarse sea salt.
Cook the tomatoes in their own juice for half an hour, skimming off any scum that rises.
Stir with a wooden spoon or paddle, then can and seal according to general directions.
Store in glass jars wrapped in paper in a dark place.
