Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour cream
Adds tangy flavor and richness to the base.
Sweet cream
Provides fat that makes the ice cream smooth and creamy.
Sugar
Adds sweetness and keeps the frozen texture softer.
Lemon juice
Adds bright acidity that balances the cream and sugar.
Lemon rind
Adds aromatic lemon oils that flavor the cream.

The step that matters

Steep the lemon rind in sweet cream over boiling water. Gentle heat draws the aromatic oils from the rind into the cream. Steeping too long can also pull bitter compounds from the white pith, so timing matters.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
