What each ingredient does

Pineapple
Provides the main fruit flavour and sweetness, and its juice gives the ice its body.
Clarified syrup
Adds sweetness and, by lowering the freezing point, keeps the ice softer and less rock-hard.
Lemon juice
Adds acidity that brightens the pineapple flavour and balances the sugar.
Meringue
Optional; folded in part-frozen, it adds air and a lighter, softer texture.

The step that matters

Adding meringue when half frozen. Added too early, the meringue sinks and melts into the liquid; added too late, it cannot mix in evenly. Partly frozen ice keeps the airy meringue suspended and light.
