Crab-Apple Jelly

Ingredients

Directions

  1. Wash and quarter the crabs without coring them.

  2. Cover the crabs with 1-2 inches of cold water and cook until mushy.

  3. Pour the mixture into a coarse cotton bag or strainer and press to extract the juice.

  4. Place fine muslin over a colander set over a bowl and slowly pour the juice in, allowing it to strain through.

  5. Repeat the straining process twice, rinsing the muslin frequently.
