Ingredients

Directions

Prepare the syrup

  1. Pare, halve, and seed the peaches.

  2. In a porcelain kettle, combine sugar and water to make a syrup. Bring the syrup to a boil.

Pack the cans

  1. Drop in enough peaches for one can. Test with a silver fork until tender.

  2. Gently lift the peaches with a wire spoon. Place them in a can. Pour the hot syrup over the peaches. Cover. Seal immediately.

  3. Repeat the process with remaining peaches. Keep them hot until ready to can.

What each ingredient does

Peaches
Form the fruit that is canned, softening as they cook in the syrup.
Granulated sugar
Sweetens the syrup and helps the peaches keep their shape and flavor.
Water
Dissolves the sugar to make the syrup that covers the peaches.

The step that matters

Test with a silver fork until tender. Peaches must be tender but not falling apart. Underdone fruit stays firm and may not be safely heated through, while overcooked fruit breaks down and turns mushy in the jar.
