Scalloped Clams

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the shells

  1. Ask the dealer to open the first dozen clams, keeping the shells intact.

  2. Clean the shells thoroughly and place 2 soft clams on each half shell.

Season and top

  1. Add a dash of white pepper and ½ teaspoon of minced celery to each shell.

  2. Add 4 small pieces of diced bacon to each shell.

  3. Sprinkle a thin layer of cracker dust on top and place a piece of butter.

Bake

  1. Bake in a 400°F (200°C) oven until brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main body of the dish and its briny seafood flavor.
Bacon
Renders fat into the shells and adds savory, smoky flavor.
Butter
Adds richness and helps the topping brown in the oven.
Cracker dust
Forms a crisp, browned topping over the clams.

The step that matters

Bake in a 400°F (200°C) oven until brown. Clam protein toughens quickly when overheated, so the clams can turn rubbery before the topping fully browns. Watch the colour rather than letting them bake too long.

Swap the white pepper

How well each one fits the dish's main ingredients (clam, celery, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Pepperfits better
  4. White pepperthe original

Fit is the average pairing score against clam, celery, butter. Candidates are from the same food group and used in at least 100 recipes.
