Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the roll

  1. Pound the round steak gently.

  2. Spread the dressing over the steak.

  3. Sprinkle with coarse sea salt, black pepper, and small bits of butter.

  4. Roll the steak tightly and tie it securely.

Coat and bake

  1. Spread 2 tablespoons of butter over the rolled steak.

  2. Wash the steak with a well-beaten egg.

  3. Place water in a bake pan and lay the steak in it without touching the water.

  4. Bake in a 400°F (200°C) oven for 30 minutes, basting often.

Serve

  1. Make a brown gravy and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak
Forms the outer wrap and becomes tender and sliceable when rolled and baked.
Egg
Brushed on as a wash, it helps the surface set and brown in the oven.
Butter
Adds richness and moisture, and helps the surface brown during baking.

The step that matters

Keep the steak out of the water in the pan. Letting the roll sit in the water would steam and soften the crust instead of letting dry oven heat brown it, so the steak should rest on the pan above the water.
