Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Cut the eggplant in half and scoop out the insides.

  2. In a saucepan, combine the insides with minced ham and water; boil until soft.

  3. Drain the water and mix in breadcrumbs, butter, minced onion, salt, and pepper.

Stuff and bake

  1. Stuff each half of the eggplant with the mixture and top with small lumps of butter.

  2. Bake at 350°F (175°C) for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the shell that holds the filling and softens as it bakes.
Minced ham
Adds savory, meaty flavor to the filling.
Grated breadcrumbs
Absorb moisture and give the filling a soft, binding body.
Butter
Adds richness and moisture, and helps the top brown as it melts.

The step that matters

Drain the water after boiling. Excess water left in the filling would make it loose and watery, so draining lets the breadcrumbs and butter bind it into a mixture that holds its shape in the eggplant halves.
