Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Forms the rich body and creamy texture of the dessert.
Isinglass or gelatine
Sets the mixture so it holds its shape as it congeals.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.
Powdered sugar
Sweetens the cream and dissolves smoothly into the mixture.
White wine
Adds acidity and aromatic flavor to the cream.

The step that matters

Stir the lukewarm mixture into the cream mixture. Gelatine or isinglass must be cooled slightly before mixing, because if it is too hot it can thin the cream and weaken setting. If it is too cold, it may clump or set unevenly before it is evenly blended.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar, white wine):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar, white wine. Candidates are from the same food group and used in at least 100 recipes.
