Strawberry Jam

Ingredients

Directions

Make the jam

  1. Combine strawberries and sugar in a preserving pan.

  2. Stir gently to avoid breaking the fruit.

  3. Simmer the mixture for 30 minutes.

  4. Transfer the jam into airtight pots.

Seal the pots

  1. Cut round covers from writing paper.

  2. Smear the inside of the covers with egg white.

  3. Optionally dip a circular paper in brandy.

  4. Place the paper over the jam before sealing to prevent dampness.

  5. Tie the covers over the pots.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the fruit, flavor and pectin-bearing body that the jam sets from.
Sugar
Sweetens the jam and helps it thicken and keep well.
Egg white
Seals the paper covers onto the pots so they stay airtight.

The step that matters

Simmer the mixture for 30 minutes. Simmering concentrates the sugar and fruit until the jam thickens; too little cooking leaves it runny and more prone to spoiling, while overcooking can make it dull and tough.
