What each ingredient does

Standing prime rib roast
Provides the main meat, whose fat and connective tissue add flavor and juiciness as it cooks.
Potatoes
Absorb moisture and savory flavor in the covered containers, becoming soft and tender.
Carrots
Add natural sweetness as their starches soften and their sugars develop during cooking.
White onions
Soften and turn sweet and mellow as they cook in the covered containers.

The step that matters

Searing the roast at 500°F. A very hot start browns the surface through the Maillard reaction, building flavor and color. Searing too briefly or at too low a heat leaves the meat pale and less flavorful.

Swap the nutmeg

How well each one fits the dish's main ingredients (carrot, potato, onion, pepper):

  1. Parsleyfits better
  2. Celeryfits better
  3. Thymefits better
  4. Nutmegthe original

Fit is the average pairing score against carrot, potato, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
