Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Thoroughly grease jelly tins and rub off excess with a coarse towel.

  3. In a bowl, cream the butter and sugar together.

  4. Gradually add the milk, egg whites, flour, corn starch, cream of tartar, and baking soda. Mix until well combined.

  5. Pour the batter into prepared tins.

Bake and make the filling

  1. Bake until golden brown.

  2. Blanch the almonds. Pound the blanched almonds.

  3. Beat the eggs.

  4. Add 1½ cups sugar, the pounded almonds, and vanilla.

  5. Spread the filling between the layers of the cake.

What each ingredient does

Butter
Adds fat and richness, giving the cake a tender crumb.
All-purpose flour
Provides the main structure that holds the cake together as it bakes.
Egg whites
Add structure and lift, helping the cake set and rise.
Corn starch
Softens the crumb, making the cake more tender than flour alone.
Almonds
Provide the nutty flavor and moist, dense texture of the filling.
Eggs
Bind the almond filling and help it set as it cools.
