Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Roll out puff pastry to ¼ inch thick and fold it like a sheet of paper.
Roll it out to ⅛ inch thick and 12 inches wide, then roll it up tightly.
Wet the edge to seal and flatten to ¾ inch thick.
Cut into ¼ inch thick slices and place cut side down on a baking pan.
Bake in a very hot oven at 400°F (200°C) until they flow.
Dust with powdered sugar and return to the oven to melt the sugar for a glaze.
If needed, use a salamander or brush with egg white, dust with sugar, and return to the oven briefly.
Spread raspberry jam or jelly on one slice and sandwich with another.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
