Boston Oyster Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the crust

  1. Preheat the oven to 400°F (200°C).

  2. Butter the inside of a deep pie plate.

  3. Line the pie plate with puff pastry or pie crust.

  4. Prepare another sheet of pastry for the lid.

  5. Place a clean towel in the dish to support the lid.

  6. Bake the crust until done.

Make the oyster filling

  1. While the crust is baking, clean the oysters.

  2. Drain the oyster liquor into a pan.

  3. In a stew pan, add the oysters with just enough liquor to prevent burning.

  4. Season the oysters with pepper, coarse sea salt, and butter.

  5. Add a little sweet cream or milk and the rolled crackers.

  6. Let the mixture simmer gently.

Assemble and serve

  1. Remove the baked lid.

  2. Fill the pie with the oysters and gravy.

  3. Replace the lid.

  4. Serve hot.

What each ingredient does

Oysters
Provide the main filling and the briny, savory flavor of the pie.
Crackers
Absorb liquid and thicken the gravy around the oysters.
Sweet cream or milk
Adds moisture and richness to the gravy, mellowing the briny oyster flavor.
Butter
Adds fat and richness to the seasoned oysters and the greased pie plate.
Puff pastry or pie crust
Forms the structure that holds the filling, browning to a crisp shell.

The step that matters

Simmer the oysters gently. Oysters toughen and shrink when boiled hard, so they should simmer gently only until their edges curl. Just enough liquor in the pan prevents scorching while the cream and crackers thicken the gravy.
