Scalloped Clams

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the shells

  1. Ask the dealer to open the first dozen clams, keeping the shells intact.

  2. Clean the shells thoroughly.

Fill the shells

  1. Place 2 soft clams on each half shell.

  2. Add a dash of white pepper to each shell.

  3. Add ½ teaspoon of minced celery to each shell.

  4. Cut fat bacon into small dice.

  5. Add 4 pieces of bacon to each shell.

  6. Strew a thin layer of cracker dust over the top.

  7. Place a piece of butter on top of each shell.

Bake

  1. Bake in a 400°F (200°C) oven until brown.

What each ingredient does

Soft clams
Form the main body of the dish and release their juices into the shell as they heat.
Fat bacon
Adds fat and savoury flavour as it renders into the clams and shells.
Cracker dust
Forms a thin crumb layer that helps the top brown and crisp in the oven.
Butter
Adds richness and fat that helps the top brown during baking.
Minced celery
Adds a fresh, aromatic vegetable note to the clams.
