Asparagus with Eggs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the asparagus for 20 minutes.

  2. Cut off the tender tops and place them in a deep pie plate.

  3. Butter, salt, and pepper the asparagus well.

Make the egg topping

  1. Beat the egg yolks and whites separately until stiff.

  2. Add the milk or cream, 1 tablespoon of warm butter, and season with salt and pepper to the eggs. Pour the egg mixture evenly over the asparagus.

Bake

  1. Bake at 400°F (200°C) for 8 minutes or until the eggs are set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a custard-like layer that holds the asparagus together when baked.
Butter
Adds fat for richness and a rounded flavor to the asparagus and eggs.
Milk or cream
Adds moisture that keeps the baked eggs softer and more tender.

The step that matters

Baking until the eggs are just set. Egg proteins set with heat, and overbaking squeezes out water and makes the eggs curdled and rubbery. Checking at the minimum time keeps the texture soft.

Swap the asparagus

How well each one fits the dish's main ingredients (butter, pepper, egg, milk):

  1. Capsicumfits about as well
  2. Potatofits about as well
  3. Asparagusthe original
  4. Chivefits less well

Fit is the average pairing score against butter, pepper, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
