Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the sauce, giving it its body and creamy flavour.
Flour
Thickens the cream as it heats, giving the sauce a smooth, coating texture.
Rich cream
Adds fat and richness, softening the sauce and deepening its flavour.
Egg
Enriches the sauce and adds body; it thickens gently when stirred into warm liquid.
Butter
Adds fat and rich flavour to the sauce.

The step that matters

Stir in the beaten egg off the heat. Egg proteins set when heated, so adding it to a very hot sauce can scramble it. Removing the pan from the heat first lets the egg thicken the sauce smoothly.
