Royal Sago Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Combine the sago and milk in a saucepan and bring to a boil until the sago swells.

  2. While hot, stir in the butter, sugar, and flavoring.

  3. Once cool, mix in the beaten egg yolks and pour into a buttered pudding dish.

  4. Bake at 350°F (175°C) for 30 to 45 minutes, then let cool.

Top and brown

  1. Beat the egg whites with powdered sugar until frothy.

  2. Spread the pudding with jam, then top with the frosting.

  3. Bake for an additional 2 minutes to brown the frosting.

What each ingredient does

Sago
Swells in hot milk to give the pudding its body and soft, tender texture.
Milk
Cooks with the sago to form the creamy base that sets as the pudding bakes.
Egg yolks
Enrich the custard and help it set into a firm, smooth pudding.
Egg whites
Whipped with powdered sugar to form a light frosting that browns in the oven.
Butter
Adds richness and a smooth mouthfeel to the pudding base.

The step that matters

Baking the frosting for only 2 minutes. Egg white meringue browns quickly at high heat and can scorch or weep if left too long. Watching it closely keeps the topping golden and tender rather than dry or bitter.

Swap the raspberry

How well each one fits the dish's main ingredients (milk, butter, sugar, egg):

  1. Vanillafits better
  2. Figfits better
