Peach Conserve

Ingredients

Directions

  1. Halve the peaches and remove the stones. Peel the peaches.

  2. Roll the peaches in powdered sugar until they no longer absorb any more sugar.

  3. Place the peaches on a plate with the hollow side up to prevent juices from running out.

  4. Lay the plate in the sun. The next morning, roll the peaches in sugar again.

  5. Once the juice is set in the peaches, turn them over to sun-dry the other side.

  6. When thoroughly dry, pack the peaches in glass jars or fig-drums.

  7. For serving, place the peaches in a porcelain pot with a little water and stew for a few minutes.
