Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Release their liquor during steaming, giving the bouillon its main briny flavour.
Oysters
Add savoury, briny flavour and tender texture when cooked until plump.
Butter
Adds richness and a smooth, rounded mouthfeel to the broth.
Milk
Adds creaminess and softens the briny taste of the broth.

The step that matters

Cooking the oysters until plump and edges curl. Oysters turn tough and rubbery when overcooked. Heating them only until the edges curl keeps them tender while the broth stays hot.
