Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Scrape the corn from the cobs.

  2. In a bowl, mix the corn with the beaten yolks of the eggs, sugar, flour, melted butter, salt, and pepper.

  3. Fold in the beaten egg whites gently.

Bake

  1. Pour the mixture into a greased baking dish.

  2. Bake at 350°F (175°C) for 30 to 45 minutes, until set and golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks and whites set the pudding into a custard-like structure as it bakes.
Corn
Supplies the main bulk, sweetness and moisture of the pudding.
Butter
Adds fat for richness and a tender texture.
Flour
Helps thicken the custard so it holds its shape when set.
Sugar
Adds sweetness and helps the top turn golden in the oven.

The step that matters

Folding in the egg whites gently. The beaten whites trap air that helps the pudding rise and stay light. Vigorous stirring deflates them, leaving a denser, flatter result.
