Asparagus with Eggs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the asparagus

  1. Boil the asparagus for 20 minutes.

  2. Cut off the tender tops and place them in a deep pie plate.

  3. Butter, salt, and pepper the asparagus well.

Make the egg topping

  1. In a bowl, beat the egg yolks and whites separately until stiff.

  2. Add the milk or cream, 1 tablespoon of warm butter, salt, and pepper to the eggs.

  3. Pour the egg mixture evenly over the asparagus.

Bake

  1. Bake at 400°F (200°C) for 8 minutes or until the eggs are set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a soft, custard-like layer that holds the dish together when baked.
Butter
Adds richness and flavour, and helps the asparagus brown lightly in the oven.
Milk or cream
Adds moisture and makes the egg layer softer and more tender.
Asparagus
Forms the base vegetable, with tender tops that hold their shape under the egg.

The step that matters

Beating the egg whites until stiff. Stiffly beaten whites trap air, which gives the topping lift. Overbeaten whites turn dry and grainy and separate, so the egg layer bakes unevenly and loses its smooth set.

Swap the asparagus

How well each one fits the dish's main ingredients (butter, pepper, egg, milk):

  1. Capsicumfits about as well
  2. Potatofits about as well
  3. Asparagusthe original
  4. Chivefits less well

Fit is the average pairing score against butter, pepper, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
